In a typical commercial kitchen environment, food scraps, dishwashing runoff, cooking oils and grease, flow to a water tight grease trap(s), where they are decomposed by bacteria. In the trap, the complex food and waste particles are broken down by natural bacterial processes so that the effluent, leaving the trap as clean as possible. This causes minimal grease buildup in downstream lift stations, drain lines and processing plants.
Inside the trap, the majority of the waste decomposes into grease intercepted with water while heavier solids settle to the bottom and accumulate as sludge. Other lighter particles, including grease and oil, rise to the surface and form a scum. The decomposed grease trap effluent, then flows from the tank, through sanitary drainage lines, lift stations, and eventually ends up at a wastewater treatment facility.
However, when a grease trap system is overloaded or not properly maintained, the bacterial decomposition can slow or stop, causing untreated liquid and solid wastes to overflow the outlet deflection device and create grease build-up problems downstream. Excessive use of bleaches, disinfectants and caustic or acid drain cleaners also deters the bacterial action of the system, and greases and solids can build up until they choke the system and block the flow of the liquid in the drainage piping downstream of the trap(s). When this happens, the local Utilities Authority typically will begin looking upstream to determine which restaurant / commercial facility is creating excessive grease build-up in their municipal lines and lift stations.
How To Prevent Problems In Your Grease Traps
Have your grease trap(s) checked and the accumulated grease, fats, oils and sludge pumped by your local KRK Enterprises, Inc. company a minimum of four times a year. In some cases of extreme grease generation, monthly maintenance may be required to create cleaner discharge levels.
Add Grease Trap Treatment and/or KRK Drain Maintainer to your kitchen drain lines to maintain a healthy, free-flowing system. For normal system maintenance, pour the entire contents of a one-gallon container directly into the kitchen drain lines and floor drains. To ensure peak system performance, repeat this procedure every month. For problem systems, add one gallon weekly for eight weeks, followed by monthly treatments. For best results, do not add disinfectants, laundry bleaches or caustic or acid drain cleaners to the system for several days following treatment.
